Study Background
UMichigan is conducting a study to develop a broccoli-sprouts-enriched diet in the management of ulcerative colitis.
This study will help determine whether eating broccoli sprouts as a dietary approach to treating ulcerative colitis is doable, whether it can reduce inflammation, and whether it can change gut bacteria in a “good” way.
Participants will have two in-person visits at the beginning and end of the study to collect height and weight information, as well as to collect blood. They will also fill out questionnaires about their diet, health, and inflammatory bowel disease symptoms. Then participants will eat one or three servings of steamed broccoli sprouts a day for 28 days.
Findings from this research study will help us learn whether eating broccoli sprouts can potentially benefit patients with ulcerative colitis.

Additional Information
The purpose of this study is to determine the effects of eating broccoli sprouts on symptoms, levels of the anti-inflammatory metabolite sulforaphane, inflammation, and the gut microbiota in patients with ulcerative colitis.
You may qualify for this study if you meet the following criteria.
Inclusion Criteria:
- Ages 18+
- Diagnosed with ulcerative colitis
- Currently receiving treatment/medication for ulcerative colitis
Once enrolled, this study involves:
- Attending two in-person visits at the beginning and end of the study to collect height and weight information and to collect blood
- Sending a stool sample at the start and end of the study
- Filling out questionnaires about diet, health, and inflammatory bowel disease symptoms
- Eating one or three servings of steamed broccoli sprouts a day for 28 days
- Broccoli sprouts will be provided when participants come for their first visit and then they will be shipped
Compensation is provided up to $100 for your participation.
There is no cost for you to participate in our research study.
